We were curious students of the game and he answered all of our questions about the pasta-making experience. We made gnocchi a few days after his visit based on his guidance and it turned out excellent. I would highly recommend this to anyone with an interest in learning more or honing their craft.

We had a totally plant based meal; an interesting olive tapenade over sourdough bread, delicious soup, roasted vegetables over mashed celeriac, an a coconut creme with red plums and pistachios. I learned many things about how to bring out flavors and how to mix flavors. There were four of us and we all had an outstanding time. Chef Joshua was a brilliant, kind and interesting teacher.
