Begin by assembling a classic Niçoise salad, layering seasonal vegetables, soft-boiled egg and anchovy with a clean, herb-forward dressing. Next, you'll build a chicken fricassée from scratch – browning the chicken, sautéing mushrooms and onions and finishing the sauce with cream for a deeply comforting result. We had a totally plant based meal; an interesting olive tapenade over sourdough bread, delicious soup, roasted vegetables over mashed celeriac, an a coconut creme with red plums and pistachios. I learned many things about how to bring out flavors and how to mix flavors. There were four of us and we all had an outstanding time. Chef Joshua was a brilliant, kind and interesting teacher.
