His ventures included opening a restaurant in Cusco and heading up an events catering crew in Lima. His journey brought him to the U.S., where he worked in array of top-shelf eateries. Now based in NYC, Chef Diego relishes teaching novice cooks how to create diverse global and gourmet fare completely from scratch.

WHAT YOU’LL DO
Discover how to prepare your own Japanese meal using local, authentic techniques and ingredients.
Take a culinary journey to Japan as you explore the traditional techniques and classic flavor combinations that make up Japanese cooking. Begin your cooking class with Chef Diego by thinly slicing cucumbers you'll toss in a balanced dressing for a typical palate cleansing starter.
For the main, you'll learn how to carefully slice fresh fish and how to layer rice, seaweed and other ingredients for stunning sushi rolls of both the uramaki (rice on the outside) and makizushi (seaweed on the outside) styles. For dessert, make something subtly sweet and very authentic: Black sesame ice cream.
Guests are welcome to bring wine and beer to enjoy during the class.
