Have everything chopped, diced, sliced, minced, pounded, etc. 2. Have the pork pounded flat and placed in the marinade (garlic, orange juice, red onion, salt, cumin). 3. Have the plantain peeled, cut into 1" chunks, and placed in a cup of water. 4. Make the garlic paste (smash 2 garlic cloves with 1/4 tsp sea salt). 5. Have all ingredients measured out and ready to use. 6. Have all cooking tools and equipment out on your countertop or cooktop. 7. Have the rice pre-cooked. Also note, the measurements listed on the recipes are specific to the time frame allotted for the event. Therefore, anyone attempting to double or triple the recipe won't be able to keep up with the flow of the cooking class.
