Learn how to build a vegan ratatouille bowl featuring from-scratch vegan pesto and creamy polenta.

During this interactive online cooking class with Chef Angela-Michelle, you will learn how to build a vegan ratatouille bowl using fresh, high-quality, easy-to-find ingredients and easy-to-master cooking techniques. Chef Angela-Michelle will begin by teaching you how to properly butcher and perfectly sautГ© your ratatouille vegetables. Then, you will learn how to make the creamy polenta foundation for your bowl, vegan basil pesto, and authentic Italian bruschetta to complete the meal.

Before we embark on some culinary fun, we must first properly prepare to ensure a seamless and timely event. The items listed below must be completed PRIOR TO the class start time: 1. Cut, chop, dice, slice, and mince everything according to the recipes. 2. Have everything measured out and ready to use. 3. Have the bread pre-sliced and on a baking sheet. 4. Have all cookware, kitchen tools, etc. on your cooktop or countertop ready to use. Also note, the measurements listed on the recipes are specific to the time frame allotted for the event. Therefore, anyone attempting to double or triple the recipe won't be able to keep up with the flow of the cooking class. All of these efforts will ensure a smooth, seamless cooking experience for all involved. Thank you in advance for following these pre-class preparation instructions.

Meet your chef


Growing up on a family farm with chefs for parents, Chef Angela-Michelle learned how to cook at the age of six and bake at the age of eight. Now, Chef Angela-Michelle has become certified in plant-based nutrition, has published several cookbooks, has traveled the world to hone her culinary craft, is the host of two TV cooking shows and is the founder and owner of her own successful cooking company that teaches others how to shop, cook, eat and live well.

Angela-Michelle was awesome! We instantly felt comfortable with her since she is so fun and personable. She was patient and worked with us. We appreciate her experience in plant based cuisine. The Vegan meal we made turned out amazing! We will definitely book her class again. Highly recommended!

The food was very tasty! However, the experience was very stressful. The chef was unprepared in that she did not have a copy of the Cozymeal instructions in front of her. She seemed surprised by some of the quantities and instructions that we were provided. For example, the liquid quantities for Polenta were double what she actually wanted us to use. It was confusing. When asked about other quantities, she did not know and would have to pause and go to look it up, reminding us that we should have had it premeasured. I organized this class as a fun activity for family members in four locations. One family member had difficulty signing in, causing a 1-2 minute delay. Also, the instructions did not say to have our ovens preheated to 400 degrees before class. Since putting the bread into the oven was the very first step, we felt behind and rushed. Throughout the class we were repeatedly reminded of the slow start and that we were running late. All of us felt uncomfortable, and some of us even felt shamed, with these reminders. I don't think Chef realized that this was a 75 minutes class, that she ended 10 minutes early. The rushing was unnecessary. The food was wonderful and the chef's tone was pleasant, but I am very sorry that I booked this event for my family.

Chef was a most enjoyable instructor and made us feel like we were right there in the kitchen with her. Loved the recipes and time spent with her, and will definitely look for more of her classes!
