How To Cut Lychee

Instead, look for fruit with intact skin that is slightly bouncy to the touch. 

It is also important to note that lychee does not continue to ripen after it has been harvested, so it is always best to enjoy it when it is fresh. Similarly, be sure that once you peel the rind off of it, you eat it right away, as it doesn’t last long outside of the hard, protective rind.
