What You'll Do

Travel to the Carribean with Chef John as he teaches you techniques for a classic Cuban meal.

Having studied with Carribean chefs, Chef John knows his Cuban food. In this class, he will walk you through Cuban techniques for braising, making sauces, and more.

You’ll start off with a salad made from chayote, a gourd native to Central America, and classic rice, black beans, sofrito, and capers. Next, learn how to make satisfying braised pork shoulder topped with garlicky mojo sauce. Platanos maduros--sweet fried plantains--are the perfect compliment to the meal, and you’ll end the evening with classic Cuban flan.

Meet your chef


As a youngster, Chef John would skip school to make tomato soup and grilled cheese from scratch at home. Decades later, his passion for fresh food is just as strong as it ever was. He headed to college where he befriended and learned from chefs from the Caribbean, Southwest, Mexico and the South. Today, he travels to the Southwest and the South to discover new and exciting cooking techniques.
