In a cast-iron skillet over medium-high heat, add the butter and melt.

Once the butter is melted add the corn kernels and the jalapeno pepper to the skillet and spread in an even layer.

Cook, stirring frequently until the corn is cooked through and slightly charred, about 8-10 minutes.

Transfer the charred corn kernels to a bowl and add the mayonnaise, cojita cheese, smoked paprika, finely chopped scallion, minced garlic, cilantro and lime juice. Stir to combine. Season to taste with salt and pepper.
