Preheat the oven to 365°F and line a sheet pan with parchment paper. Remove the core of the cauliflower and cut it into florets.
Add the cauliflower to a food processor and pulse until crumbs form.
In a medium saucepan over low heat, cook the cauliflower for 3 minutes. Remove from the heat and let cool. Transfer the cauliflower to a cheesecloth and squeeze out any extra liquids.
In a bowl, add the cauliflower, garlic, salt, pepper and Parmesan. Mix well.
Scoop four teaspoons of the mixture and place it on your prepared sheet pan. Flatten the mixture to form thin, round circles. Repeat with the remaining mixture, making sure to space out each circle about 2-inches apart.
Bake the cauliflower chips for about 9-12 minutes, or until crisp.
Remove from the oven and sprinkle with either kosher or pink salt. Enjoy!
