Preheat the oven to 400°F. Line a sheet pan with aluminum foil or parchment paper. Slice the zucchini into ½-inch thick coins.
Place the sliced zucchini and the garlic cloves onto the prepared sheet pan. Sprinkle on the Italian seasoning. Drizzle the avocado oil over the zucchini and garlic cloves and toss to coat. Lightly season with salt and pepper. (See notes 1.)
Roast for about 15 minutes. Remove the pan from the oven and sprinkle with the freshly grated Parmesan cheese. Return the pan to the oven and roast for another 5-10 minutes or until the zucchini are tender and the Parmesan is golden brown.
Remove the sheet pan from the oven. Pick out the garlic cloves and peel them to reveal the roasted garlic. Chop the roasted garlic.
Toss the roasted garlic with the roasted zucchini. Garnish with parsley and serve. Enjoy!
