Preheat the oven to 350°F. Measure and prep all ingredients.
Make the flax egg. In a small bowl, combine ground flax with filtered water. Set aside for 5 minutes or until it thickens.
In a large mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg and salt.
In a medium mixing bowl, combine the applesauce, maple syrup, brown sugar, vanilla extract, grated zucchini and the flax egg together. Mix thoroughly.
Add the zucchini mixture to the flour mixture. Gently fold the batter with a rubber spatula until it just combines. (See notes 1.)
Pour the batter into a lightly greased bread pan. Place on the center rack and bake for 45-50 minutes. When the top begins to turn golden brown, test with a toothpick to see if it is finish
Allow to cool for 10 minutes before slicing and enjoy!
Notes:
- Do not overmix when combining the wet and dry ingredients. It will make your bread tough!
