Step 1

Preheat the oven to 400°F. In a medium-sized bowl, stir together the mayonnaise, grated Parmesan and chopped sweet onions.

In the bowl of a food processor, add the drained marinated artichoke hearts and pulse until they are finely chopped.

Transfer the chopped artichokes to the mayonnaise mixture. Add the lemon juice and black pepper. Mix to combine.

Transfer the mixture to a small baking dish and sprinkle the top with the panko (or plain breadcrumbs). Drizzle with a little olive oil. Bake until the top is brown, about 20 minutes.

Notes:

  1. This recipe can be gluten free if you eliminate the breadcrumbs.

Wow! Really love this one. If you love artichokes, this is truly the best. Nice and creamy, perfect for a quick snack or a nice dip to serve when you have guests over!
