Preheat the oven to 400°F degrees. Line a sheet pan with foil and spray with oil or baking spray.
Trim the carrots and scrub them clean, or peel them if you prefer, and place them on the greased foil.
In a small bowl, whisk together the honey, vinegar, oil, thyme, salt and pepper.
Pour the mixture over the carrots and roll them around to coat.
Turn up the edges of the foil so that the dressing pools under the carrots instead of spreading to the edges of the pan. Roast the carrots for 25-40 minutes, or until fork-tender.
Place the carrots on a serving platter and let the dressing left in the pan cool and thicken for a minute before drizzling over the carrots. Serve warm. Enjoy!
Notes:
- Use carrots that are no more than an inch in diameter at their thickest point. If your carrots are of varying thicknesses, remove the thinner ones whenever they're done to the serving platter before you put the rest back in the oven.
