Preheat the oven to 325°F. Line a baking sheet with parchment paper. In a large saucepan over medium heat, melt the butter.
Whisk in the honey and 1 teaspoon of salt. Bring the mixture to a boil and cook for about 1 minute while stirring constantly.
Turn off the heat and stir in the peanuts. Mix until the peanuts are evenly coated in honey.
Transfer the peanuts to the prepared baking sheet, Make sure to spread out the peanuts in one even layer.
Roast the peanuts for about 25-35 minutes or until golden brown, stirring every 5-10 minutes so the peanuts roast evenly and do not burn.
While the peanuts are roasting, whisk together the remaining ½ teaspoon of salt, sugar, cayenne pepper and garlic powder in a small bowl.
Once the peanuts are done, stir the peanuts so the honey that has dripped off becomes evenly distributed. Transfer the honey roasted peanuts into a large mixing bowl.
Add the sugar mixture to the peanuts by the spoonful while constantly stirring to keep the peanuts from sticking to each other. Add the sugar mixture to your taste, you might not use all of it.
Once all of the sugar has been added, let the honey roasted peanuts cool completely, stirring occasionally to keep them from sticking together.
Once it’s cooled, serve the honey roasted peanuts immediately or transfer them to an airtight container. Enjoy!
