This lightly dressed wilted spinach salad is a great side salad to a savory meal. Pump cherry tomatoes, rich pine nuts and salty prosciutto are tossed together with fresh spinach in a simple Dijon mustard dressing.

In a 12-inch skillet over medium heat, heat the olive oil. Add the fresh spinach and sauté, constantly stirring, for 2-3 minutes until the spinach is wilted.

I'm not a big lunch person but this recipe was so quick and simple to make and it was GOOD. But anything with prosciutto is amazing.
