In a heavy-bottomed pot or a Dutch oven, heat the vegetable oil to 325°F. Peel and slice the bananas. Set them aside.
Make the batter. In a large bowl, add the rice flour, dried coconut, granulated sugar, baking soda, water and a pinch of salt. Mix until combined. Let the batter rest for 5 minutes.
Dip one banana slice into the batter and slowly submerge it in oil to test the oil first. The batter should fry up golden brown if the oil is hot enough.
If the oil is hot enough, dip the remaining banana slices into the batter one by one and fry them, making sure not to let them touch.
Serve the fried bananas immediately paired with coconut ice cream. Garnish with sesame seeds on top before serving for an authentic presentation. Enjoy!
Notes:
- If desired, the unsweetened dried coconut may be rehydrated before adding it to the batter.
