Prepare the quinoa. In a pot combine the water and quinoa over medium-high heat. Bring the mixture to a boil.
Cover the pot and turn the heat down to simmer for 12-15 minutes or until all of the water is absorbed.
Transfer cooked quinoa to a large bowl. Drizzle cooked quinoa with extra-virgin olive oil and Spike seasoning (or salt and pepper).
Add the diced tomatoes, diced cucumbers, diced red onions (or scallions), diced avocados, chopped fresh basil and crumbled feta.
Gently toss and serve. Enjoy!
Notes:
- The recipe can be made vegan with a favorite vegan crumbled cheese or without feta.
