Preheat the oven to 400°F. Prepare a wire rack on top of a baking sheet. Prepare the mushrooms. First, remove the stems of the portobello mushrooms.
Chop the stems finely and set them aside.
Use a spoon to scoop out the gills. Discard the gills.
In a mixing bowl, add the reserved chopped mushroom stems, marinara sauce, basil and crushed red pepper. Mix until combined.
Divide the marinara sauce between the portobello mushrooms.
Top the marinara sauce with mozzarella and Parmesan cheese. Place the sliced tomatoes and mini pepperoni on top of the cheese.
Place the mushrooms on the prepared wire rack.
Bake for 20-25 minutes until the mushrooms are tender and the cheese is melted. Turn the oven to broil and broil for 1 minute, until the cheese is browned.
Remove from the oven and garnish with fresh parsley.
Serve with a side salad for a complete meal. Enjoy!
