Preheat the oven to 350°F. Prepare a 9x13 baking dish. On a cast-iron skillet over medium-high heat, heat the olive oil. Add the steak and season with salt and pepper. Sauté until the meat is just cooked, about 3-4 minutes. Remove from the pan and set aside.
Add the onion, bell pepper, salt and pepper to the skillet and cook until softened, about 7-8 minutes. Add the garlic and cook just until fragrant, less than 1 minute.
Add the steak back to the skillet and cook until heated through, about 2-3 minutes. Set aside.
Place the bottom half of the rolls into the baking dish. Spread the mayonnaise evenly over the rolls.
Evenly spread the steak mixture over the rolls.
Sprinkle the provolone cheese and the mozzarella cheese over the steak mixture.
Cover with the top half of the rolls. Brush the top of the rolls with melted butter.
Cover the baking dish with foil. Bake the rolls for 10 minutes.
Remove the foil and bake for an additional 10 minutes or until the cheese has melted.
Serve warm. Enjoy!
