In a bowl, mix the chicken, garlic, ginger and soy sauce. Transfer the mixture into the refrigerator and marinate for 30 minutes.
In a large skillet or a wok, heat 1 tablespoon of olive oil until it shimmers.
Add the onions and sauté for 2-3 minutes.
Add the broccoli and bell pepper and cook until tender, about 3 minutes. Remove the vegetables from the skillet and set them aside.
Drain chicken from the marinade. Reserve the remaining marinade for later. Add the remaining 1 tablespoon of olive oil to your skillet.
Over high heat, add the chicken to the pan and cook 3-4 minutes per side or until fully cooked.
Add the cooked vegetables back into the skillet along with the remaining marinade, mushrooms and sesame oil. Cook 3-4 minutes or until the mushrooms are cooked through.
Serve immediately. Enjoy!
