Dice ½ tablespoon of cold butter into small cubes.
In a small bowl, whisk together the eggs, the diced butter, mayonnaise, salt and pepper until the mixture is lighter in color.
In a small nonstick skillet over medium-low heat, melt the remaining ½ tablespoon of butter. Once the butter is melted, add the eggs to the pan. Do not stir and let the eggs set for about 30 seconds.
Using a silicone spatula, push the edges of the eggs to the center, letting the uncooked eggs flow to the edges. Cook, stirring occasionally until the eggs are almost set. Turn off the heat and remove the pan from the heat.
Transfer the eggs onto your plate and serve hot. Enjoy!
