Measure and prep all ingredients.
Prepare the chopped Italian sandwich filling. On a large cutting board, spread out the shredded lettuce. Top with the provolone, salami, deli ham, mortadella, pepperoni, tomato, pepperonchini and red onions.
Chop everything together until the pieces are no larger than one inch.
Add the mayonnaise, Italian vinaigrette, red wine vinegar and Italian seasoning to the top of the chopped Italian sandwich filling. Chop until the ingredients are well combined. Season with salt and pepper, to taste.
Generously scoop the filling into a hoagie or sub roll until it is well packed. Serve and enjoy!
