Measure and prep all ingredients for the chopped cheese sandwich.
In a bowl, combine the ground beef and the adobo (or sazón). Season with salt and pepper, to taste. Shape the ground beef into two large flat patties.
On a large cast iron skillet or a large griddle pan over medium heat, add the olive oil and unsalted butter. Once the butter is melted, add the diced green bell pepper and onion. Move to one side of the skillet (or pan). Sauté until softened.
While the vegetables are sautéing, cook the beef patties on the empty side of the skillet. Let the beef cook until a brown crust forms, about 4-5 minutes before flipping to cook an additional 2-3 minutes.
Use a metal spatula or a bench scraper to chop the beef into small pieces.
Mix the green bell pepper and onion with the beef and cook until the beef is no longer pink. Add the minced garlic. Cook the garlic until fragrant, about 1 minute.
Turn the heat to low. Top the mixture with the American cheese slices and let the cheese melt. Once the cheese melts, mix until well combined. (See notes 3.)
While the cheese melts, slice the hoagie rolls in half and butter each side of the roll. In a separate skillet over medium heat, toast the buttered sides of the rolls until golden brown.
Drizzle the toasted rolls with ketchup and mayonnaise. Divide the chopped cheese mixture in half and top each roll. Top with lettuce and tomatoes.
Roll each hoagie in aluminum foil or deli paper and let rest for 3-4 minutes before slicing in half and serving. Enjoy!
Notes:
- Adobo or sazón seasoning can contain salt, keep that in mind when seasoning the beef.
- Onions and bell peppers are optional and can be left out if desired.
- The griddle pan or the skillet can be covered to facilitate melting.
