Prepare the caramel syrup. In a small pot, combine the granulated sugar, light corn syrup, ¼ cup water, and salt. Stir to combine.
Over medium-high heat, cook undisturbed until the sugar reaches an amber color, about 10 minutes.
Remove the pot from heat and stir in the remaining ½ cup of water. Stir in the vanilla extract. Let the mixture cool before storing in the refrigerator.
Prepare the caramel latte. In a coffee mug, combine the vanilla syrup and espresso.
Add the steamed and frothed milk. Stir to combine.
Top with whipped cream and caramel syrup. Sip and enjoy!
Notes:
- Corn syrup helps prevent crystallization and create a smooth caramel syrup. If avoiding corn syrup, golden syrup or honey can be used. The flavor will be a little different if substituted.
- Whole milk is traditionally used but any milk of choice can be substituted.
