In the bowl of a large food processor, add the chicken, bell pepper, soy sauce, white pepper, sesame oil, salt, ginger and garlic.
Pulse the mixture together until a coarse-textured mixture forms.
Transfer the mixture into a large bowl. Add the mozzarella cheese and mix it well.
Heat the vegetable oil to 325°F. Line two rows of five pieces of wonton wrappers on a dry surface. Cover the rest of the wonton wrappers with a damp cloth to keep them from drying out. Place ½ tablespoon of the mixture in the center of the wonton.
Using a pastry brush, wet the edges of the wonton with very little water to prevent it from getting soggy.
Fold the wonton into the shape of your choice. Repeat with the remaining wontons wrappers. (See notes.)
Fry the wontons immediately in the hot vegetable oil until golden brown and crispy.
Serve with sweet and sour sauce. Enjoy!
Notes:
- Make-ahead Option:
- If you are not planning to fry the wontons immediately, freeze the wontons and store them in an air-tight container.
- When ready to fry, fry the frozen wontons a few at a time to keep the temperature of the frying oil consistent.
