Bring a large pot of water to a boil. Preheat the oven to 400°F. Add the diced sweet potatoes and cook for 18-20 minutes, until just tender. Drain the sweet potatoes into a colander. Set aside.
In a large saucepan over medium-low heat, slowly melt together the butter, brown sugar, vanilla and cinnamon. Stir constantly until the sugar is well dissolved.
Fold in the reserved sweet potatoes, dried cranberries and walnuts.
Transfer the sweet potato mixture to a casserole dish and bake for 20-25 minutes until hot. (See notes.)
