Preheat oven to 400°F. Line a baking sheet with parchment paper. Measure and prep all ingredients.
Scrub and rinse the sweet potato. Pat dry.
Slice the sweet potato lengthwise to create ¼-⅓ inch thick slices.
Place the sweet potatoes on the prepared baking sheet and lightly coat the sweet potato slices with olive oil. Season with salt and pepper. Bake for 5 minutes.
Flip the sweet potato and bake for an additional 5 minutes. The sweet potato is done when a fork easily pierces the sweet potato but stays as one whole piece. Do not overcook or the sweet potato will fall apart.
For the savory sweet potato toast, top the sweet potato with the mashed avocado.
Top the avocado with a small bunch of arugula and cherry tomatoes.
Top the arugula with the pan-fried egg. Sprinkle with everything but the bagel seasoning.
For the sweet sweet potato toast, generously spread the top of the sweet potato with the almond butter. Top the almond butter with the banana slices.
Sprinkle with toasted nuts or sesame seeds. Drizzle the maple syrup or honey. Enjoy!
