Preheat oven to 350°F. Grease a 9x13-inch baking pan. Peel the apples and cut them in half, lengthwise.
Scoop out the cores and stems. Place them with their cut sides up in the baking pan.
In a large bowl, combine the oats, brown sugar, melted butter, cinnamon, ginger, nutmeg and salt. Mix thoroughly to combine.
Place a large pinch of the mixture into the hollow core of each apple.
In the bowl with the remaining oat mixture, stir in the baking powder. Then stir in the milk, water and eggs.
Pour the oat mixture into the pan with the apples. Bake for 20 to 25 minutes, or until the apples are tender and the oatmeal is golden brown.
Serve warm. Enjoy!
Notes:
- Be sure to use Diamond Crystal kosher salt. Different kosher salt brands have varied crystal sizes and may affect the salinity of the recipe.
