Preheat your waffle iron. Preheat the oven to 200°F. Layer a cooling rack over a baking sheet and place it in the oven. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda and salt. Make sure the brown sugar breaks down and there are no lumps.
In a separate bowl, whisk together the butter, eggs, buttermilk and vanilla until well combined.
Add the egg mixture to the flour mixture and fold with a rubber spatula until you see streaks of flour.
Add 1¼ cups of blueberries to the batter and fold until the blueberries are evenly dispersed.
If your waffle iron calls for it, coat the waffle iron with cooking spray and cook the batter according to your waffle iron’s instructions. Transfer the waffle to the cooling rack in the preheated oven to keep warm while you cook more waffles. Make sure not to stack the waffles in the oven and keep them in a single layer.
Top the waffles with powdered sugar, whipped cream and the remaining ¼ cup of blueberries. Serve with maple syrup. Enjoy!
Notes:
- Be sure to use Diamond Crystal kosher salt. Different kosher salt brands have varied crystal sizes and may affect the salinity of the recipe.
