What You’ll Do

Master basic butchery skills as you utilize the animal from head to tail with this hands-on cooking class, using California-grown produce to highlight textures and flavors of the whole bird.

Begin by mixing a decadent duck liver mousse, smoothing it on crostini and topping with pickled shallots. Next, pan-sear duck breast, mastering the cross-scoring technique and serving it over glazed tree collards. Next, you'll roast the duck in its own juices, confit-style, over a bed of seasoned lentils. Finally, use duck fat to make cookies and enjoy with chocolate mousse.

Guests are welcome to provide wine and beer to enjoy during the class.
