In a small pot over low heat, melt the white chocolate, about 2 minutes.
In the jar of a blender or a food processor, add the vanilla wafers and pulverize the wafers into medium-fine crumbs.
In a cold bowl, combine the melted white chocolate and the wafer crumbs. (See notes.)
Transfer the mixture into the refrigerator and chill for at least 30 minutes.
Scoop one tablespoon of the white chocolate mixture into your hand and compact it together.
Create a divot and place an almond in the center.
Roll the white chocolate mixture in between your palms to create a spherical shape. If the white chocolate is too sticky, try moistening the palms of your hands before rolling. Repeat with the remaining white chocolate mixture.
Dip the white chocolate sphere into the coconut flakes, rolling it back to a spherical shape if needed. Repeat with the remaining white chocolate truffles.
Refrigerate the white chocolate truffles for at least 30 minutes before serving.

Notes:
- The sweetness of your white chocolate truffle will depend on the sweetness of your chocolate and wafer.
- The recipe can be customized with lots of different ingredients such as coffee powder, dark chocolate and pistachios.
