Measure and prep all ingredients.
Prepare the red layer. In the bowl of a blender or food processor, add the strawberries and blend until smooth. Taste and sweeten with honey, if needed.
Fill each popsicle mold ⅓ of the way with the strawberry mixture. Add the popsicle sticks and lid. Freeze for 1 hour.
Prepare the white layer. In a bowl, mix together Greek yogurt, honey and vanilla extract. Taste and adjust sweetness if desired.
Transfer the yogurt mixture to a piping bag. (See notes 3.)
Remove the lid and fill each popsicle mold another ⅓ of the way with the yogurt mixture. Tap to even out the yogurt mixture and release any bubbles. Replace the lid. Freeze for 1 hour.
Prepare the blue layer. In the bowl of a blender or food processor, add the blueberries and blend until smooth. Taste and sweeten with honey, if needed. If the blueberry mixture leans more purple than blue, blue food coloring can be added to boost the color.
Remove the lid and fill each popsicle mold ⅓ of the way with the blueberry mixture, leaving some room at the top. (See notes 4.)
Freeze until completely frozen, about 6-8 hours. Remove from the mold and enjoy!
Notes:
- Raspberries also work in this recipe. The sweetness of the popsicles will depend on the quality of the fruit. So be sure to choose whichever fruit looks best.
- Wild blueberries are sweeter than regular blueberries and are preferred in this recipe.
- Greek yogurt is thick and will not easily pour like the puree. Transferring it into a piping bag makes it easier and neater to fill the popsicle molds.
- The popsicles will expand when frozen, so be sure to leave some room.
