Preheat the oven to 400°F. Line a sheet pan with parchment paper or aluminum foil. Place a single layer of tortilla chips on the sheet pan.
Evenly spread half of the pulled pork over the tortilla chips.
Sprinkle half of the cheddar and Monterey Jack cheese over the pulled pork.
Evenly spread half of the chopped red onion and pickled jalapeños over the cheese.
Drizzle the barbecue sauce over the nachos.
Repeat the steps with the remaining tortilla chips, pork, cheese, onion, peppers and barbecue sauce. Bake the sheet pan for about 6-8 minutes until the cheese is melted and bubbling.
Top with sour cream and cilantro and serve. Enjoy!
