Preheat the oven to 350°F. Oil and flour an 11-inch loaf pan. Measure and prep all ingredients.
Using a handheld or standing mixer, cream together the softened butter and sugar until lightened. Beat in the salt and vanilla. Beat in the eggs, one at a time, until fully combined. Whisk in the flour until a smooth batter is formed, taking care not to over-mix.
Gently fold in the peaches. Transfer the batter to the prepared loaf pan.
Top the cake with the thinly sliced peaches.
Make the streusel topping by combining the butter, sugar, vanilla and flour until a crumble texture forms. Evenly top the peaches.
Transfer the peach cobbler pound cake to the oven. Bake for 55 minutes to 1 hour, or until a toothpick inserted in the center comes out clean.
Let the cake cool completely before slicing. Enjoy!
