Prepare the chicken. Create a pocket by slicing each chicken breast horizontally about halfway.
In a bowl, mix together salt, pepper, dried oregano, pepper and garlic powder.
Coat the chicken breast on both sides with the mixture.
Stuff the chicken breast with the shredded mozzarella cheese and use a toothpick to secure the chicken breast shut, if needed.
Cook the chicken. Place the olive oil in a large skillet on medium-high heat. Once hot, add the chicken breasts. Cook for 4 minutes on each side.
Prepare the tomato sauce. In a medium bowl, stir together the crushed tomatoes, garlic, dried oregano, salt and pepper. (See notes 1.)
Reduce the heat to medium, and add the tomato sauce to the skillet, surrounding the chicken. Cover and let it simmer for up to 10 minutes or until the chicken is completely cooked. (See notes 2.)

Notes:
- You can make more tomato sauce and serve the chicken with pasta.
- Chicken must have a minimum internal temperature of 165°F.
