In this hands-on class with Chef Mike, you will learn how to properly cook vegetables in a way that creates bold, interesting flavor profiles and textures, and create vegetarian dishes that are both deceptively simple and staggeringly complex.

Some of the dishes you can look forward to creating in this class include a citrusy and completely crave-worthy green salad built on a bed of little gem lettuce, brown butter sunchokes with furikake and pickled radish, baharat-spiced financiers with apples and homemade sweet potato pie purГ©e, and so much more!

After graduating from Auburn, Chef Mike apprenticed at a friend’s restaurant and often threw dinner parties for the staff after work. He was so inspired by this experience that he attended the Culinary Institute of America. Chef Mike then joined the ranks of many Michelin-starred restaurants in the U.S. and Europe. He is currently an executive chef known for his ability to transform the familiar into something extraordinary.
