She was able to clearly explain how certain vegan substitutions work, and knew how to maximize flavor and texture in each dish. Her dishes are so fresh and creative that even someone who isn't vegan or gluten free would love them!

The instructor and staff were excellent. However I did not enjoy the non traditional tamales. Nor did I receive the recipes. I at least wanted the masa recipe.
