Measure and prep all ingredients.
Assemble the vegan pancake mix. In a large airtight with a lid, add the whole-grain pastry flour, oat flour, brown sugar, baking powder, baking soda and salt. Mix and store in an air-tight container in a cool dark place or in the refrigerator.
Make the pancakes. Make the flax egg by mixing the flaxseed and water. Let the mixture thicken for 5-10 minutes.
In a bowl, whisk together the flax egg, oil, almond milk and vanilla extract.
Stir in 1 cup of the vegan pancake mix and mix just until combined. Let the batter rest for 10 minutes.
Heat a nonstick griddle or skillet over medium heat. Grease the skillet or griddle and ladle ⅓ cup of the batter.
Let the batter cook until the edges are dry and the bottoms are golden brown, about 2-3 minutes.
Flip and cook the other side until the bottoms are golden brown and the interior is set, about 2-3 minutes. Repeat with the remaining batter.
Top with maple syrup and enjoy!
Notes:
- If gifting in a jar, layer the ingredients so there is a pretty stripe effect. Tie the jar with a decorative ribbon and label it with instructions. You can even package the ground flax seed separately for the recipient to make the flax egg.
- To reheat the pancakes:
- Place a pancake into each slot of the toaster. Toast on medium and enjoy!
