Measure and prep all ingredients.
Prepare the burger sauce. In a bowl, combine the mayonnaise, pickle relish, yellow mustard, paprika, garlic powder, onion powder and white wine vinegar.
Divide the ground beef into 2-3 ounce portions and lightly roll them into balls.
Heat a griddle to medium-high heat. Once the griddle is hot add the balls of ground beef. Work in batches if there is not enough room.
Place a flour tortilla above each beef ball and smash it down with a spatula to create a thin layer of beef that covers the entire tortilla.
Let the beef cook until a brown crust forms, about 2-3 minutes. Flip the tortillas over and lower the heat to medium (or transfer it to a cooler side of the griddle). Season the beef with salt and pepper.
Top each smash burger taco with a slice of cheese. Cover and let the cheese melt and the beef finish cooking, about 2-3 minutes. Repeat with the remaining ingredients.
Top with dill pickles, diced onion, shredded lettuce and a drizzle of the burger sauce. Serve immediately. Enjoy!
Notes:
- Sweet paprika will be closest to the Big Mac sauce but hot or smoked paprika can also be substituted.
