Schug, also known as skug, skhug or zhug, is a Middle Eastern spicy condiment that originated in Yemen and can be used in a variety of dishes. Schug sauce gets its heat from green chili peppers, freshness from parsley and cilantro and its citrusy finish from the lemon juice.

Step 1

In the bowl of a food processor, add the garlic cloves, green chiles and habanero peppers. Pulse to chop.

Add the cilantro, parsley, lemon juice, salt, coriander, cumin, turmeric, cardamom and black pepper. Pulse until roughly chopped.

Step 3

With the food processor on, add the oil. Do not overprocess as the final sauce should still have some texture. Taste and adjust the seasoning with more lemon juice and salt.

Serve on grilled meats, vegetables, skewers or even burgers. It can even be used as a dip for bread. Enjoy!

Notes:

  1. The number of peppers added will adjust the spiciness of the schug. For a mild schug, make sure to use just ½ cup and remove the inner membrane and seeds of the pepper. For the spiciest schug, use the full one cup and keep the peppers whole.
  2. Use just one habanero pepper for a milder schug. Use three for a very spicy schug.
