Prep and gather all ingredients. Heat the olive oil in a large pot over medium heat.
Add the onion and cook until softened and translucent. Add the smashed garlic cloves and cook until fragrant and lightly browned, about 5 minutes. Remove the garlic from the pan.
Add the salt, red pepper flakes, bay leaf, crushed tomatoes and wine, if using.
Bring the sauce to a simmer and cover. Simmer for 1 hour. After 1 hour, remove the lid and simmer uncovered for an additional 15-20 minutes, until the sauce is thickened to your liking. Stir in basil and remove bay leaf. Taste and adjust for seasoning and salt.
Serve with pasta.
Notes:
- The longer you simmer this sugo sauce, the creamier it will be. Simmer the sauce for 2-3 hours for more robust flavor and creaminess.
