Measure and prep all ingredients.
In a medium mixing bowl, combine the salmon, mayonnaise, spicy brown mustard, sweet relish, diced tomato, salt and pepper.
Toast the slices of bread and place them on a preparation surface.
Spread the mashed avocado onto the toast.
Add the shredded lettuce.
Add a slice of Canadian bacon or thinly sliced deli meat, if desired.
Place a scoop of the salmon mixture and spread it across the toast.
Spread the sauerkraut over the salmon mixture. Top with a second slice of toast.
Cut and serve with your favorite chips, a warm bowl of soup or both. Enjoy!
Notes:
- Leftover salmon filets or canned salmon can be used.
- Note that leftover salmon will be more chunky than if using canned salmon, which would take on more of a canned tuna texture.
- If using canned salmon, drain the liquid from the can and flake. Do not be afraid to mix in the bones and skin as they are edible.
