Preheat the oven to 375°F. Measure and prep all ingredients.
In a microwave-safe bowl, add the salted butter and minced garlic. Microwave on low heat in 30-second increments until the butter is melted, about 1-2 minutes. (See notes 2.)
Using a bread knife, slice the bread in 1-inch diagonal cuts, being careful to stop about a ¼-inch from the bottom, to create a crisscross pattern.
Wrap the bottom half of the bread with aluminum foil.
Using a pastry or silicone brush, brush the garlic butter in between each slice of bread. Scatter the remaining chunks of garlic in between the slices.
Place the shredded mozzarella cheese in between each slice.
Cover the top of the bread with another piece of aluminum foil. Bake the bread for 15 minutes.
Remove the bread from the oven and the top piece of aluminum foil.
Sprinkle the top of the bread with Parmesan cheese. Return the bread to the oven and bake for another 5-10 minutes, until the cheese is melted.
Top with chopped fresh parsley.
Serve immediately. Enjoy!
Notes:
- High-quality salted butter is important in this recipe as it imparts most of the flavor.
- Be careful not to overheat the butter as it will explode in the microwave, causing a butter splattered mess.
