In a large skillet over medium-high heat, add the olive oil. Once the oil is hot, sauté the garlic until fragrant, less than 1 minute.
Lower the heat and add the chopped onions. Cook until softened.
Add the fresh Roma tomatoes, garlic cloves, tomato paste, red wine, granulated sugar, oregano, basil leaves, salt, black pepper and red pepper flakes. Simmer for at least 20 minutes. If a meaty sauce is desired, sauté ground beef in a pan and add to the sauce. Season to taste.

Notes:
- This recipe also works with 6 heirloom tomatoes or one 28-ounce can of tomatoes.
- You can use 1 tablespoon chopped fresh herbs instead.
