Make the lemon simple syrup. In a small pot, add the water, sugar and lemon zest.
Heat the mixture, stirring occasionally until the sugar completely dissolves, about 2-3 minutes. Transfer into a heat-proof vessel, cover and refrigerate until completely cool. (See notes 1.)
Use a fine-mesh strainer to strain the lemon simple syrup into the jar of a blender.
Add the freshly squeezed lemon juice, cold water and ice. (See notes 2.)
Blend until slushy.
Serve immediately in a tall glass garnished with mint leaves and lemon slices. Enjoy!
Notes:
- The lemon simple syrup takes quite a while to cool down. It is best done the night before. Alternatively, you can transfer it into the freezer for a faster cooling process. Make sure to check on it periodically so the mixture does not freeze.
- This frozen lemonade is quite icy. If you want your frozen lemonade less icy, reduce the amount of ice with water.
