Cook the bacon. In a skillet, cook the bacon on medium-low heat until crispy. Drain the crispy bacon on a paper towel lined plate.
Prepare the dressing. In a small bowl, whisk together the apple cider vinegar, lemon juice, Dijon mustard, honey (or maple syrup) and minced garlic.
Slowly add the extra-virgin olive oil while whisking to create an emulsion. Season with salt and pepper.
Finely slice the Honeycrisp apple.
Slice the cooled bacon into lardons.
Assemble the salad. Toss the frisee with a light drizzle of the dressing. Plate with finely sliced apples, crisp bacon and extra dressing on the side. Enjoy!
