Use a round pastry cutter or the mouth of a mason jar to cut out the center of each slice of bread.
In a nonstick skillet over medium-low heat, melt 1½ tablespoons butter. Add one piece of the bread and coat both sides of the bread in the melted butter.
Pan-fry on one side until golden brown, about 2 minutes.
Increase the heat to medium and crack one egg into the center hole of the bread and let cook for about 1 minute.
Flip the toast and cook for about 15 seconds. Season with salt and pepper. Remove and serve the toast. Repeat the steps with the remaining toast.
