What You’ll Do

Learn how to use the under-utilized parts of animals into mouth-watering dishes.

In this engaging cooking class, learn how often discarded ingredients can become integral for delicious meals. Chef Kyle will teach you basic knife work and butchery skills to craft multiple courses.

Begin the class with a beef heart tartare flavored with capers and served with market greens and grilled bread. Use duck fat to make roasted cauliflower with red Fresn and garlic. Craft a savory porca puttana, a pasta with crispy pig skin. Finish the meal with a rich chocolate blood crГ©meux and sugared pig skin chichachuros for dessert.

Guests are welcome to bring wine and beer to enjoy during the class.
