Cooking Class - Provençal: A French Culinary Exploration

Join Chef Paul in creating some of the most famous traditional dishes of Provence.

This interactive French-themed cooking class will teach you to create some of the region’s most iconic dishes. You’ll learn the finest Provençal techniques to turn fresh ingredients into delightful textures and flavor combinations.

You’ll begin by tossing together a crispy mint salad combining bright beets and oranges with rich feta cheese. Then, you’ll roast salmon to perfection and pair it with a zingy olive tapenade before creating a traditional ratatouille with eggplant, mushrooms and zucchini from scratch. Round out the experience by making a raspberry sorbet for a wonderfully refreshing finish.

Guests are welcome to bring wine and beer to enjoy during the class.

Chef Paul was amazing. This was a great date night for my husband and I. This would also be the perfect group or corporate event. Chef Paul not only thoroughly explained the recipes we were making, but answered all of our other, random questions about cooking. He was a true professional and one-of-a-kind. Chef Paul has been a professional chef for nearly 40 years. Born and raised in Belgium, he started his cooking career as an apprentice. After receiving his culinary arts degree, he continued to gain experience in several restaurants in Belgium. In 1983, he moved to NYC and became the executive chef at famous restaurants in Tribeca and the West Village. In 2001, he opened his own cooking school, which is still thriving today.
