In this hands-on cooking class, Chef Carlos will guide you as you prepare vibrant dishes inspired by a fusion of flavors from Latin American cuisines. Practice your culinary skills and techniques from seafood sous vide to creamy hollandaise while incorporating signature spices and ingredients of these cooking styles.
Begin class with a tequila-infused shrimp sous vide with jalapeГ±os, tomatoes and bold spices. Next, you will learn how to cook succulent scallops to pair with patatas bravas, roasted salsa and a spicy hollandaise. Finish the meal with rich vanilla flan.
Guests are welcome to bring wine and beer to enjoy during the class.

Chef Carlos is a well traveled chef who has experience in many international cuisines. He showed me a technique to cook a tomato to remove the skin and seeds. This was a technique I plan to use for future recipes. He is knowledgeable and excited to share his passion with his guests.

A graduate of Le Cordon Bleu in Las Vegas, Chef Carlos has traveled and trained internationally and across the country from Hawaii to the Grand Canyon learning and practicing new cuisines. Having worked in prestigious venues throughout his career, Chef Carlos combines professional technique and international flair with a focus on French, Italian and Spanish cuisines as well as sharing his own culinary creativity.
